Pumpkin, Potato, and Spinach Pancakes

Steam the pumpkin and potato until soft, then mash with a fork.

Steam the spinach and chop finely.

Beat the eggs and mix with water and all-purpose flour to form a batter.

Add the batter to the mashed pumpkin and potato, mix well, then add onion, garlic, spinach, and corn. Mix again until well combined.

Heat a pan with some oil over medium-low heat. Spoon the batter into the pan, cover with a lid, and let it cook until the top starts to set. Flip the pancakes.

Cook both sides until they are slightly crispy to prevent them from falling apart.
