Curry Couscous with Shrimp

Chop the onion coarsely;

Sauté the onion in oil in a large pot;

Add the couscous to the pot along with a little water;

While the couscous absorbs the water, add spices to taste;

As the water is absorbed by the couscous, if it is not yet cooked, add more water;

Once the couscous is cooked, add the shrimp. They should cook for just a few minutes to remain tender and juicy;

Adjust with salt and pepper.
