  1. 2.2 lbsfresh lamb shanks (about 1 kg)
  2. Ingredients for boiling the lamb
  3. 6 quartswater (about 6 liters)
  4. 1 teaspoonground ginger
  5. 5fresh bay leaves
  6. 5whole cardamom pods
  7. 5whole cloves
  8. 2onions, quartered
  9. 2 sprigsfresh mint
  10. 2 stripslemon peel
  11. 2 stripslime peel or 1 tablespoon dried lime
  12. 2 tablespoonsclarified butter or ghee
  13. 1 tablespoonfresh or dried rosemary
  14. 1 teaspoonground or whole coriander
  15. 2cinnamon sticks
  16. Ingredients for hummus moutabal
  17. 2 cupsground chickpeas (about 340 grams)
  18. 1/2 cupfresh lemon juice (about 120 ml)
  19. 1/4 cuptahini (about 60 ml)
  20. 1 teaspoonsalt
  21. 1 teaspoonground cumin
  22. 1 teaspoonminced garlic
  23. For sautéing the lamb
  24. 5large onions
  25. 2 tablespoonsvegetable oil
  26. 1 teaspoonlamb spice blend
  27. 1 teaspoonground cinnamon
  28. 1 teaspoonpaprika, for garnish

    Place the lamb, clarified butter, and all the spices in a large pot. Stir well to combine.

    Once the lamb changes color and the spices are fragrant, add the fresh mint and bay leaves, then pour in the water.

    Cover the pot and cook the lamb until it becomes very tender.

    To prepare the sautéed lamb: Heat the oil in a pan, add the onions and spices, and sauté until the onions are golden. Add the boiled lamb, season with salt, and stir for a minute so the lamb absorbs the onion and spice flavors.

    Mix all the hummus moutabal ingredients together in a deep bowl.

    To serve: Spread the hummus moutabal on a large platter, leaving a well in the center. Place the lamb in the middle, garnish with paprika and fresh bay leaves, and serve.
