Braised Lamb Shanks with Hummus Moutabal

Place the lamb, clarified butter, and all the spices in a large pot. Stir well to combine.

Once the lamb changes color and the spices are fragrant, add the fresh mint and bay leaves, then pour in the water.

Cover the pot and cook the lamb until it becomes very tender.

To prepare the sautéed lamb: Heat the oil in a pan, add the onions and spices, and sauté until the onions are golden. Add the boiled lamb, season with salt, and stir for a minute so the lamb absorbs the onion and spice flavors.

Mix all the hummus moutabal ingredients together in a deep bowl.

To serve: Spread the hummus moutabal on a large platter, leaving a well in the center. Place the lamb in the middle, garnish with paprika and fresh bay leaves, and serve.
