Ingredients

  1. 15 ouncesricotta cheese
  2. 3large eggs
  3. 10 ouncescooked, drained frozen spinach
  4. 2 cupsshredded mozzarella cheese
  5. 3 clovesminced garlic
  6. 2large scallions, thinly sliced
  7. 1 teaspoonsalt
  8. 1 teaspoonpepper
  9. 1/3 cupgrated Parmesan cheese
  10. 1frozen pre made deep dish pie crust
  11. Red pepper flakes, amount optional

Cooking Instructions

45 minutes
  1. 1

    Cook frozen spinach according to package instructions. Drain all liquid from cooked spinach.

    In a bowl combine all ingredients, including spinach.

    Mix well.

  4. 4

    Fill pie crust and place into a pre heated oven set at 350 degrees farenheit.

    Cook 40- 45 minutes or until set and lightly browned on top.
