Steps

First of all, wash and soak foxtail millet for 15 minutes. Mean while chopped all the veggies. Heat ghee and oil in a pan. Fry the cashew and peanuts and keep aside. Keep flame medium.

In same pan, add mustard,cumin seeds,split urad dal,chana dal and allow it to crackle. Allow the dal to turn golden brown and crisp. Add chilli, ginger paste and sauté for few seconds. Add onions and saute until the onions soften. Add all the chopped veggies and mix well.

Add soaked foxtail millet and 2 cup water.add salt and mix it well.then cover the pan with lid for 15-20 minutes in law flame. Keep stirring in between. After then add fried cashew and peanuts and mix well.turn off the heat.

Now give it a gentle stir. Squeeze in the juice from one lemon and stir in the chopped coriander leaves. Serve Foxtail Millet Upma for a wholesome breakfast.
