Grate the cucumber using the large holes of a box grater. Squeeze out the excess liquid. Sprinkle with salt, let it sit for about 30 minutes to release more liquid, then squeeze again to remove as much moisture as possible.

In a bowl, combine the yogurt, salt, plenty of freshly ground black pepper, vinegar, olive oil, and garlic. Mix until smooth and well combined.
