Steps

Finely chop the jaggery and combine it with 3/4 cup water (180 ml) in a pan. Bring to a boil.

Simmer over medium-low heat until the mixture is reduced by half. Strain and set aside to cool.

Pour the milk into a pot and bring to a boil. Simmer over medium-low heat, stirring occasionally, until the milk is reduced to about 1/3 of its original volume. Turn off the heat and let it cool slightly.

When the milk is warm, add the ground cardamom and cooled jaggery syrup. Mix well.

Add the yogurt and whisk thoroughly. The milk should be just warm when you add the yogurt.

Pour the mixture into clay pots or bowls. Cover and let it set in a warm place for 6-7 hours.

After it has set, refrigerate for 2-3 hours until chilled. Serve cold.
