Basically green peppers 🫑 or any other coloured peppers are stuffed with boiled potatoes, spices, fresh herbs which is later topped with mozzarella cheese.

Preheat oven at 180°c, First let make stuffing: heat oil, add fennel seeds & cumin seeds for few sec, add finely chopped onions 🧅, cook till soft, add ginger garlic paste 🫚🧄 cook for 1 min, add finely chopped carrot 🥕, cook 2 mins, add spices ( kashmiri chilli powder 🌶️, coriander cumin powder, turmeric powder,salt 🧂and green chili paste mix well, cook for 1 min.

Add boiled & mashed potatoes 🥔, mix well, cook for 1 min, add mashed peas 🫛 and mix well, cook for 1 min, add finely chopped basil leaves 🌱, finely chopped parsley 🌿 and mix well, finally remove from heat, add black pepper powder, finely chopped jalapeno and margarine 🧈 mix well, keep aside.

Cut the head of peppers 🫑 and remove the seeds out, keep heads aside, fill in the stuffing and press little and add grated mozzarella cheese 🧀, drizzle some few drops of oil on peppers 🫑 and bake at 180°c for 15 -20 mins or till they change in colour and also soft. Serve hot with rice or with indian flat bread. Garnish with finely chopped parsley 🌿 if desired.
