A quick and simple and easy sabji made with arbi/ colocasia is perfect for a fuss free weeknight dinner..
Steps

Heat 1 tbsp oil in a non-stick pan. Add the Arbi /TARO / Colocasia and sauté till it turns golden brown.

Add red chilli powder, turmeric powder and salt and mix well. Transfer it into a bowl.

Heat remaining oil in the same pan. Add cumin seeds, and let them change colour. Add onion and salt and sauté till golden brown.

Add ginger-garlic paste and sauté for a minute. Add tomato puree and mix well. Cook for 4-5 minutes.

Add red chilli powder, coriander powder, and turmeric powder and mix well. Add the fried arbi / colocasia and sauté for a minute.

Add 1/2 cup water and mix well. Add garam masala powder and coriander leaves and mix. Cover and cook for 6-8 minutes.

Serve hot garnished coriander sprig.
