Ugali and fried amaranth (terere)

Bring two glasses of water to boil

Add maize flour and stirr into a paste.

Add flour and stir until the paste becomes firm.

Remove from the fire and put on a plate

Fry the onions.

Add sliced tomatoes and stir lightly.

When ready add the amaranth leaves then leave to steam for a while.

Add salt while leaving it to steam.

Add spices of your choice.

When ready serve with the ugali and an ovacado if you prefer.
