Measure your beans. Put it in a sizeable bowl and put some water

Leave it for 30 to 45 mins so it can be easy to de-skin. We don't need the skin of the beans. Only the raw beans.

Rub your hands firmly on the beans to peel the skin for 10 minutes until all the peels are off.

Wash out the peels. Only the peels please.

By now, it should be soft for blending. Hopefully you didn't buy those hard black eyed peas that takes forever to cook 😁. Now, to make Akara, you don't need as much water as you do for moi moi.

Add the other ingredients. Cut the onion into half. We need to add it to the blended beans. Blend with the water in the measurement above or you your discretion. Add just enough water to move the beans in the blender

Next, pour back in a bowl. Slice your halfed onion and add it. Mix the blended beans with a wooden spatula for 20 mins to get it soft and fluffy. If you have a hand mixer, lucky you. Now is it time to use it. It shortens the time mixing but if you don't, no worries. You Akara will still come out fluffy. But the secret is in the mixing.

Turn on your stove and set on it a frying pan. Pour some oil up to half of the pan. To check if the oil is hot enough, spoon a little batter into the oil, if it doesn't sizzle, it's not ready. When it does, put some batters in the oil. 7 to 8 is enough.

Fry until golden brown. Turn over. With the spoon, press down on the Akara. It is to make sure the oil gets to the inside of the fritter while frying. When both sides are brown, scoop them out into a paper towel to allow the oil on the fritter drain out.

Enjoy with hot pap or oats.
