Have you tried this delicious and healthy Chia seeds Gakar Paratha? Gakar is a Maharashtrian flat bread made by folding whole wheat and besan dough in a unique way and then making in into a small round Paratha. It is semi roasted on tawa and then fire roasted till puffed. Tastes best with Besan Pithala and pickle. I have given it a healthy twist with Chia seeds. High in calcium, fibre, iron and protein too.

First, take a deep bowl or large flat plate and add all the ingredients except water.

Mix together with hands till combined. Then knead to a smooth dough with water and keep covered for 10 minutes. (I had already mixed a plain Gakar dough, so I Added the other ingredients later.)

Now make small rounds of lemon size and place it on a rolling board. Roll into a long cylinder shape. Then roll onwards like we do for cinnamon rolls. Then make it into a round ball and repeat this process for 2 more times.

Heat a skillet and meanwhile, roll out the dough ball into a small Paratha. Then roast the base on low flame. Flip and roast the top side till brown spots appear on top. Then with the help of holding tongs, place the base side on direct flame and let it puff up. Turn and puff up the other side too.

Now transfer to a cloth lined hot box, puncture the top puffed side with fingers and apply ghee on top. This will ensure the ghee reaches the inner layers.

Make all the Gakar parathas similarly. Serve hot with besan Pithala and pickle along with onion salad. Tastes really yummy!😋😋
