Take a beetroot, wash, and cut in halves. Boil in water. Peel off beetroot and grate it.

Take hungcurd. Add salt and sugar. Whip it well.

Add chaat masala, chopped green chillies, and ginger. For tempering, add oil, mustard seeds, urad dal, green chillies, and curry leaves.

Add beetroot in curd, and mix well. Pour seasonings. Stir well. Ready to serve. Enjoy beetroot raita, a beetroot dip with roti, paratha, puri, khakhra, nachos, etc.
