Place the halved cherry tomatoes in a baking dish. Add salt and pepper. Drizzle with olive oil and bake for 8-10 minutes, until softened.

Beat the eggs in a bowl as you would for an omelet.

Mash the roasted tomatoes in the baking dish with a fork and add the eggs.

Bake for another 15-20 minutes, stirring the eggs and tomatoes occasionally.

Just before removing from the oven, sprinkle with crumbled feta cheese.
