Add chilies to a mortar and pestle. Sprinkle a little MSG to help prevent splattering while pounding the chilies.

Add tomatoes, lime, tamarind juice, fermented fish sauce, and pickled garlic brine. Pound everything together until well mixed.

Chop the cucumbers and add them to the mortar (you can chop them on a plate first or directly in the mortar, whichever you prefer).

Add the rice vermicelli noodles and mix everything together thoroughly. Transfer to a plate and serve. Enjoy with fresh vegetables and pork rinds!
