The best way to cook couscous is by absorption. Simply cover it with twice its volume of lightly salted boiling water and wait for it to rehydrate for 10 minutes.

Fluff the couscous with a fork and spread it on a tray to cool. Meanwhile, hard-boil the eggs in a pot of water (about 20 minutes).

In a bowl, prepare the dressing: Cut the mozzarella, feta, tomatoes, and hard-boiled eggs into pieces. Add the pesto, a generous drizzle of olive oil, and mix everything together.

Plate as desired, perhaps adding a few basil leaves and another drizzle of olive oil. And voilà... Dinner is ready.
