Preheat your oven to 230°C and place your oven safe pan in the middle shelf, giving amply space above your pan

Blend together eggs, flour, milk and salt until smooth and aerated

Leave the mixture to stand whilst the oven comes up to temperature. The closer the mix is to room temperature, the better the rise in the Dutch Baby

Prepare your optional add ins (I.e. grate your cheese, chop your herbs, mince garlic) and combine together in a bowl with a pinch of salt

When your oven has come up to temperature, remove your pan from the oven and add the butter, let it melt completely ensuring the entire bottom of the pan is covered in a layer of melter butter before pouring in your batter mix

Scatter your optional cheese/herb mix over the top of the batter and return to the oven for 15-20mins. Do not open the oven during this time

Remove from oven and top with your toppings of choice (I.e. caramelised onions, cured meats, fresh herbs, fresh vegetables, other cheese, sauce of your choice, eggs, etc.)
