I just love corn. I just wanted to know how to cook it in my instant pot but man this looked so good. You just need to adjust the measurements if you are a family of 2!

Instructions
Add water to the bottom of Instant Pot inner pot.
Add in trivet or steamer basket. - 2
Place corn cobs on top of trivet or steamer basket.
Put lid on Instant Pot and place in the locked position, being sure the vent is in the sealed position. - 3
Set for manual high pressure for 2 minutes for corn without husks or 3-4 minutes with husk on.
Once time is complete, let natural release for 5 minutes. - 4
Then manually release by opening valve by turning with a wooden spoon or tongs.
Carefully remove corn with tongs and enjoy! - 5
Notes
Water Amounts:1 cup for a 3 or 6 quart Instant Pot
1.5 cups for a 8 quart instant Pot.
Cook Times:Cook on high pressure for 2 minutes for corn that is shucked.
Cook on high pressure for 3 to 4 minutes for corn that is in the husk.
For Frozen Corn, cook on high pressure for 4 minutes - 6
Optional street corn - Place cobs on hot grill, making sure the husks are not over direct heat. Grill until the corn becomes slightly charred.
- 7
Slather mayonnaise all over the corn. Shake Tajin (or chili lime spice mixture) all over the corn.
- 8
Place corn on serving platter and scatter shredded cotija cheese (or feta) all over. Garnish with cilantro and drizzle lime juice over all (if using).
- 9
I didn’t have the the lime wedges, or the cilantro, but I sprinkled lime juice on top and it was really good corn.

It was the Pixar movie "Coco" of all things that made me want to try my hand at this popular street food from Mexico. Called "Elotes" this is grilled corn on the cob shoved onto a stick and covered with delicious goodies for a salty, tangy snack!Research on traditional Elotes recipes seemed to indicate that the traditional first layer of coating is Mayo but believe it or not, I am not a huge fan of Mayo so in this version, I swapped out half of the Mayo for sour cream and the result was delicious! ryandvy -
