Sabudana and Bhagar Appe

Put the sago/sabudana in a blender and grind it to a coarse powder (not a fine powder). Then remove the sabudana powder in a mixing bowl.

Then add bhagar/varai in a blender and grind it to a powder.

Add the bhagar powder to the mixing bowl containing the sago powder. Combine both well.

Add curd/dahi and mix well.

First add ½ cup and ¼ cup of water. Mix well. When adding water, add enough to adjust the consistency. If necessary, then add 2-4 tablespoons of water.

Add cumin seeds, green chillies finely chopped, finely chopped coriander leaves and mix well. Cover the batter and keep aside for about 20-30 minutes.

After 30 minutes, if the mixture is thick, add little water and mix so that the Appe batter becomes uniform. The consistency of the batter should not be too thick or too thin.

Add salt, baking soda and mix well.

Heat appe/ paniyaram pan, grease it by adding few drops of oil inside holes of pan. Next add 1 tbsp batter into each mould.

Cover and cook on low heat for 2-3 minutes or until the underside of the appe is golden, then use a fork to flip each appe to the other side.

Again cover the Appe pan with a lid. Cook on low heat for 1-2 minutes or until the other side is cooked or golden brown.

Serve with Chutney or Curd.
