Green Peas and Sojne Phuler Chorchori or Drumstick Flower Mishmash is a healthy and tasty vegetarian Bengali side dish .This immunity boosting dish is prepared with various combinations of vegetables and greens.Different types of vegetables are used in this recipe to minimize the slightly bitter taste of drumstick or moringa flowers .The use of spices and herbs are tailored to individual taste. The bitter taste of sojne phul is minimized when they are cooked with potato chunks, eggplant, flat beans and green peas.

Green Peas and Sojne Phuler Chorchori or Drumstick Flower Mishmash is a healthy and tasty vegetarian Bengali side dish .This immunity boosting dish is prepared with various combinations of vegetables and greens.Different types of vegetables are used in this recipe to minimize the slightly bitter taste of drumstick or moringa flowers .The use of spices and herbs are tailored to individual taste. The bitter taste of sojne phul is minimized when they are cooked with potato chunks, eggplant, flat beans and green peas.

Clean and wash drumstick flowers.Drain water completely. Smear 1/4 tsp salt and turmeric. Set aside. Peel and cut potato into small cubes.Next cut both ends of flatbeans removing the threads at the side.Chop them into 2-3 pieces depending on size.Cut eggplant into small cubes as well.Smear salt in the cubed potato, eggplant and flatbeans.Heat mustard oil and fry the potatoes in low to medium flame till partially soft.Next fry the cubed eggplant till golden brown and soft.Saute the flatbeans.

Add 1 tbsp more oil.Heat it and sprinkle paanch phoron.When they splutter add the fried potatoes, flatbeans. Next add the green peas and mix well.Cook for 5 minutes till the vegetables are well cooked.Add the fried eggplant and Moringa Flowers (Shojne Phul).Also add red chilli and turmeric powder,salt and sugar to taste.Mix thoroughly.Add 1/4 cup water.Cover the pan and cook in low flame for 7-8 minutes till all vegetables are cooked well but not mushy.

Now add 1 tbsp mustard oil,green chillies and chopped coriander leaves.Toss to mix well.Adjust salt and sugar to taste.Serve hot with steamed rice and plain masoor dal.
