In a mixing bowl. Add the cucumber, corn kernels and onions, separating the strands of the onion as you add it.

Whisk together the dressing and taste it to adjust any of the ingredients. Toss the salad with a generous amount and season with salt and pepper. Chill for about an hour before serving.

if you’re planning to make this ahead of time, I recommend storing the veggies and dressing separately. Toss the veggies in the dressing right before serving.
