This dish can be served as an appetizer or enjoyed with rice. It's very nutritious.

Soak all dried ingredients until soft. Boil the dried lotus seeds until tender. Clean the fish and rub with a little fish sauce and seasoning powder, making sure to coat both the outside and inside of the fish.

Place the fish in a heatproof dish for steaming. Spread the soaked mushrooms on top, then add sliced ginger, chili, onion, orange peel, and cherry tomatoes. Top with the lotus seeds and steam over medium heat.

Steam for about 20 minutes until the fish is cooked through. Add the soaked cellophane noodles on top, then turn off the heat. Serve the fish hot.
