Ingredients

10 minutes + 30 minutes to chill
Serves 2 servings
  1. 16 ozcucumber (about 460 grams)
  2. 1/3 cupkefir (100 ml)
  3. 3 1/2 tablespoonsextra virgin olive oil (50 ml)
  4. 1 3/4 ozmixed fresh herbs: mint, dill, parsley, basil (about 50 grams)
  5. 2garlic cloves
  6. 2 tablespoonsapple cider vinegar
  7. 1/2 teaspoonsalt (or to taste)
  8. Black pepper to taste
  9. 5 1/3 ozsmoked salmon (about 150 grams)

Steps

10 minutes + 30 minutes to chill

    Peel 2 cucumbers and cut them into pieces. Place them in a bowl with salt and pepper to taste. Add the vinegar and fresh herbs. Add the olive oil and garlic cloves.

    Blend everything together. Add the kefir to the blended cucumber and mix well. Chill the mixture in the refrigerator for at least 30 minutes.

    Serve the soup in a deep bowl and garnish with cucumber pieces, smoked salmon, fresh herbs, and a drizzle of olive oil.
