Cucumber Gazpacho with Kefir and Smoked Salmon

Peel 2 cucumbers and cut them into pieces. Place them in a bowl with salt and pepper to taste. Add the vinegar and fresh herbs. Add the olive oil and garlic cloves.

Blend everything together. Add the kefir to the blended cucumber and mix well. Chill the mixture in the refrigerator for at least 30 minutes.

Serve the soup in a deep bowl and garnish with cucumber pieces, smoked salmon, fresh herbs, and a drizzle of olive oil.
