Sauté the onions and garlic in ghee until golden. Add the required amount of water for the rice (for every 1 cup of rice, use just under 2 cups of water). Add the potatoes, cinnamon stick, yellow spice blend, sweet curry powder, and, if you like, 1 tablespoon tomato paste. Let the potatoes cook until tender.

In another pan or pot, sauté the eggplant in ghee and a little vegetable oil until lightly browned. Add the bell pepper and sauté, then add the tomatoes, then the ground beef, stirring after each addition. Cook until the eggplant reaches your desired color.

Once the potatoes are done, drain them and add them to the cooked vegetables.

In a pot, layer some of the vegetable mixture, then a layer of washed and slightly soaked rice. Repeat with another layer of vegetables and rice until all ingredients are used. Pour the reserved cooking water over the layers and sprinkle with salt.

Cook until the water is absorbed and the dish is done.

For garnish, if you like, sauté some of the reserved ground beef with a few almonds in a separate pan and place them on top when serving.

I also made a side of finely chopped lettuce mixed with yogurt, dried mint, salt, and mashed garlic—it turned out amazing!
