Soak the vegan ribs in water until softened. Marinate the ribs with grilling sauce, a little sugar, soy sauce, water, and a pinch of five-spice powder. Season to taste and let sit for a few minutes to absorb the flavors. Then pan-fry until golden in oil and sprinkle with sesame seeds.

Take some of the soaked vegan ribs, cut into thin strips, and fry until crispy.

Cut carrots into thin strips and sauté with a little oil, some seasoning powder, and a splash of water. Cut cucumber into thin strips.

For the garlic chili dipping sauce: Mix 1 part vegan fish sauce, 2 parts water, and 1 part sugar. Bring to a boil, let cool, then add minced garlic, chili, and calamansi or lime juice.

Place cooked rice noodles in a bowl, add the grilled ribs, sautéed carrots, fresh vegetables, crispy ribs, and peanuts. Drizzle with the dipping sauce and enjoy.
