AraiPadi :
Arai padi, a traditional Tamil measuring tool. Padi is a Tamil word and used those days as a traditional measure in milliliters (ml) for rice /grains / edible oil etc.
Arai padi is equivalent to 500 ml.
For Biryani Recipe, rice and water measurement is so in
otherwise, rice will be soggy.I have taken Arai Padi measurement rice which can serve 4 people.
For water measurement (1 Arai Padi of rice = 2 Arai Padi of water). - 2
Wash and soak the Seeraga Samba Rice in water for 20 minutes.

Heat a oil in a Pressure cooker.
Then, Add 2 spoon of ghee.

Add Spices (bay leaf, star anise, cloves, cardamoms & cinnamon)

Add Sliced Onions.

Sauté until onions turn golden Brown.
Add salt (very little) tip: adding salt to onions while sautéing it quickly turn onions to golden brown.
Tip: Onion should turn golden brown. Because it
enhances the good flavor to Biryani.While Sauteing itself, you will get a nice aroma.

Add Chopped tomatoes, green chilli.
Sauté till tomato become mushy.

Add coriander leaves, mint leaves.

Add ginger Garlic paste.
Sauté until the raw smell goes away.

Add red chilli powder, gram masala powder, pepper powder.
Mix Everything Well.

Now Add mutton pieces.
Now add remaining mint & coriander leaves, mix it well.

Add one cup of curd, mix it well.

Now add pinch of salt.

Add enough water to pressure cook mutton & close the lid. Wait for 3 to 4 whistles. Until the mutton become tender.

Now open the lid and add lemon juice.

Be careful while Adding water, add According to measurement adding more Water become rice So soggy.
Now add enough water (1 araipadi of rice = 2 araipadi of water) Here already have some water so add according to it.
and add pinch of salt.
Arai padi is equivalent to 500 ml
Normally (1 cup of rice = 2 cups of water).
500 ml of rice = 1000 ml of water - 17
When water begins to be boiling stage. Add seeraga samba rice little by little.
Now check the taste of (saltiness,spicyness),if needed add according to it.
Stir it from the edges.

Close the lid without whistle on medium flame upto 15 to 20 minutes.Until rice seems to be cooked.

Now open the lid.Stir it from the edges.

Place on a tawa at bottom & cook on low heat for 15 minutes.

Spread a tbsp of ghee on top of the rice.

This is Optional one.Finally add mix kesari powder with water & spread on the top of rice.

Close the lid without whistle. Let the Biryani set (dum) well for 15 to 20 minutes on low flame.

Now Open the lid.Stir it from the edges.

Finally, Yummy Mutton Biryani is ready to Serve.
