Ingredients

3 to 4 servings
  1. 15Shallots
  2. 3-4 tablespoonoil
  3. 2 tablespoonkadalai paruppu (Split Bengal gram or Split chickpea)
  4. 1/2 cupFinely Chopped Brinjal
  5. 3Red Chili
  6. Small ball of Tamarind (soaked in water for 5 minutes)
  7. 1/2 cupChopped Tomoates
  8. For Tempering
  9. 1 tablespoonOil
  10. 3-4 tablespoonMustard seeds
  11. 5-10Curry leaves

Cooking Instructions

    Heat oil in a kadai (pan), add kadalai paruppu (Split Bengal gram or Split chickpea), red chilli.

    Now, transfer into the jar to grind.

    Grind into coarse form & keep aside.

    Meanwhile, in a same kadai (pan), add oil, small Onions (shallots).

    Sauté till it turn golden brown.

    Now, add finely chopped brinjal.

  6. 6

    Sauté it for some minutes.

    Now add chopped tomatoes.

    Sauté till tomato become mushy.

    Cool down & transfer into the jar to grind.

    Finally, to grind, add soaked tamarind & pinch of salt.

    Blend into smooth paste.

    For tempering, heat the oil, add mustard Seeds, and curry leaves.

    Pour the tempering over the chutney.

    Finally, Brinjal Tomato Chutney is Ready.
