Ingredients

30 minutes
Serves 4 servings
  • 14 ozbucatini (400 grams)
  • 1 lb (2 oz)smoked salmon (500 grams)
  • 1 1/3 cups fresh cherry tomatoes, halved (200 grams)
  • 1/4 cup pitted black olives (1.4 oz / 40 grams)
  • 1 1/2 tablespoons capers, rinsed (0.7 oz / 20 grams)
  • 1 small bunch fresh parsley
  • 1/2 cup dry white wine (about 120 ml)
  • 1 clove garlic
  • 1onion
  • Extra virgin olive oil, as needed
  • Black pepper, as needed
  • Salt, as needed

    Bring a large pot of salted water to a boil for the bucatini.

  2. 2

    Wash and trim the cherry tomatoes, cut them in half, and set aside.

  3. 3

    Rinse the capers under running water and set aside.

  4. 4

    Rinse the olives under running water and set aside.

  5. 5

    In a skillet, heat olive oil and finely chopped onion. Sauté until the onion is golden, then add the tomatoes. Season with salt, black pepper, and finely chopped parsley. Cook for about 10 minutes.

    Meanwhile, in another skillet, heat olive oil and finely chopped garlic. Sauté until fragrant, then add the smoked salmon. Season with salt and black pepper, and cook for a few minutes.

    Pour in the white wine, let it evaporate, then add the salmon to the skillet with the tomatoes. Add the capers and olives, season with salt and black pepper, and cook for a few more minutes.

    Drain the bucatini while still al dente and add them to the skillet with the sauce. Add a little pasta cooking water and a drizzle of extra virgin olive oil, then toss to combine.

    Plate and serve.
