A traditional and innovative roll or patra recipe made with spinach leaves and spiced besan batter. it is an excellent appetiser or a snack which can be served for any part of the entire day’s meal, including breakfast and supper. the roll or patra is stuffed with the required amount of spice and savoury and hence do not require any additional toppings of chutney or sauce.

A traditional and innovative roll or patra recipe made with spinach leaves and spiced besan batter. it is an excellent appetiser or a snack which can be served for any part of the entire day’s meal, including breakfast and supper. the roll or patra is stuffed with the required amount of spice and savoury and hence do not require any additional toppings of chutney or sauce.

First of all wash the spinach leaves with clean water and remove the stem part.

Add gram flour in a bowl and add coriander cumin powder, red chilli powder, garam masala, turmeric powder, asafoetida and salt to taste, sugar and green chilli, ginger, garlic paste.

Then add baking soda, lemon juice and oil.

Now add water as required and mix well to prepare a medium thick batter.

A layer of this batter is to be applied on the prepared spinach leaves. Place another spinach leaf on it half way from the battered leaf, spread the batter in the same way. In the same way six-seven spinach leaves are to be placed on each other and the batter is to be applied. Now this medium tight role is to be taken. Apply some batter on the roll and also on both its ends to bend the ends inwards.

After that besan batter is to be applied from above. In this way all the spinach leaf rolls are to be folded.

Now these rolls are to be placed in water heated steamer for steaming for fifteen to twenty minutes. A toothpick is to check whether the filling is properly steamed or not. After this, the roll should be taken out of the steamer and cool down to room temperature.

This roll has to be cut into round pieces. So the palak patra will be ready.

To Tempering this patra, heat oil in a pan and add mustard seeds, cumin seeds, white sesame seeds and sweet curry leaves and suate.

The prepared patra pieces are to be added to it. Mix well with tempering, keep it on medium flame and allow it to crispy a bit.

Now our very tasty and healthy spinach patras are ready to serve. This patra enjoys having it for breakfast with tea or coffee.
