Chukhandar or Beetroot Rotis are not at all unknown to us Indians. Everyone knows it and enjoys them especially in Winters when this Vegetable is available aplenty. It's actually available throughout the Year but it's absolutely fresh and flavourful in this awesome Season. And I never back out on this opportunity just like you all home chefs out there.
Parathas are made in many ways with many a delightful Vegetables. Some are stuffed and rolled whereas others are made adding everything to the dough itself directly.

Whatever might be the style of making them, they are the most loved by all. Beetroot Rotis are one among such beautiful one's. I have added some shredded Beetroots to the dough directly to make these perfect lip-smacking Rotis that can be enjoyed at Breakfast or any other meal on any day.
Although they are good on their own, Curd, Pickle or Raita are the common accompaniments. An amazing Indian Bread that's loved by many and when these Rotis or Parathas are made with numerous freshly available Vegetables, they are absolutely awesome. The colour itself is enough to dig into these beautiful looking Rotis the moment they are made. They are so damn tempting and irresistible. Let's get started.

Ingredients

25-30 minutes
4-5 servings
  1. 2medium sized shredded Beetroots or Chukhandar
  2. 2 cupsWheat flour/Sharbati Gehun Aata
  3. 1 tspSalt
  4. 2 tbspOil
  5. 2 tbspchopped Coriander Leaves
  6. 1 tspgrated Ginger
  7. 2-3finely chopped Green Chillies
  8. 1 tspAmchur/Dry Mango powder
  9. 1/8 tspAsafoetida or Hing
  10. 1/2 tspCumin Seeds
  11. as neededWater
  12. as neededOil/Ghee

Steps

25-30 minutes
  1. 1

    Add all the ingredients as mentioned except the last one and knead a smooth and a pliable dough for the rotis using water if required. Cover and keep aside for a few minutes. You can add or subtract spices as per your choice.

    Add all the spices according to one's own taste. Divide the dough into medium sized balls or as per one's own liking. Roll into a disc. Roast on a preheated griddle or a tawa. Smear with homemade Ghee on both the sides for yummy and delicious Beetroot or Chukhandar Rotis. Cook on a low heat until crisp and nicely done.
