For Vegetable stock, Chop carrot, capsicum, beans and onion into 1-inch chunks.

Heat oil in a pot over high heat. Add chopped garlic and bay leaf.

Add chopped vegetables and cook on high heat for a minute.

Cook, stirring frequently, until vegetables soften and begin to brown, 5 to 10 minutes.

Add salt and water and bring to a boil. Cover and cook for 10 minutes on low heat.

Strain with strainer and Discard the vegetables.

Keep aside this prepared stock.

For soup, wash and cut veggies in dice.

Heat butter in a pan and put chopped garlic.

Add chopped vegetables and stir well.

Add salt and pasta, cook for 2 minutes.

Add pepper powder and paprika and mix well.

Add 1/4 cup water, cover and cook till vegetables and pasta cooked well.

Now add prepared vegetable stock, cook uncovered for 5 more minutes.

Add oregano, thyme and mix well.

Serve with parsley, red pepper flakes, and parmesan.
