Gather all the ingredients. Chop the onion, garlic, and green chilies. Crack the eggs into a bowl, add salt and black pepper powder, and beat well.

Heat a pan over medium heat and add the vegetable oil. Once hot, add the garlic and green chilies and sauté lightly. Add the onion and cook until golden brown. Add all the spices and reduce the heat to low. Sauté the spices briefly, then pour in the beaten eggs. Stir and mix everything together, breaking the eggs into small pieces with a spoon.

Continue stirring and cook until the mixture is dry, as shown in the picture. Once well cooked, turn off the heat. Your delicious and healthy egg bhurji is ready. Serve hot for breakfast with paratha or bread.
