Ugali is a Kenyan dish liked by many as it is among the staple food. It is prepared from either cassava,maize, sorghum,millet flour. A mixture of the flour can also be used. For me, I prefer hostess (brand name) maize flour.

Boil the mutton till ready/tender, before the water completely drains add the sliced onions(remain some to fry the spinach),a pinch of salt, and the chopped tomatoes. Cook under low heat as you stir so that the chopped tomatoes completely cooks and the mixture turns abit golden. Add some red pepper powder and other spices as you wish. Cook for three minutes and get off fire.

In another pot pour the oil, add remaining onions fry until golden, add a pinch of salt and the chopped spinach and stir. cook for three minutes and get off fire.

Serve with hot ugali. (The mutton and spinach should be more than the portion of ugali for those checking on weight).procedure for making ugali is similar to that of Violine Atieno.
