Kantola Bhajia

Take Spine Gourd / Kantola and peel the skin and cut into two equal halves.

Steam the Spiny Gourd / Kantola halves to 50 % and allow to cool.

After cooling scoop out the inner part (pulp + seeds) of each halves of Kantola and keep aside.

Then make a smooth paste of the scoop out part + mustard seeds + green chilli. Filling is ready.

Make a thick slurry of Maida and water.

Now fill each Kantola halves with the prepared filling.

Seal the surface with the Maida slurry.

Then fry till golden brown, first fry the sealed part and then flip and fry the other part.
