Purslane and Ricotta Frittata

Purslane is an edible plant commonly found in many gardens and has been used in cooking since ancient times for its health benefits. Since it's hard to find where I live, when I was on vacation we went to pick it in the countryside at the family land, where it's also known as prchiazz. For this recipe, I have to thank the talented @flavia. The ingredients are: eggs, grated cacioricotta cheese, purslane, salt, and pepper. My version: I adjusted the quantities to my needs, added a couple of basil leaves, and a generous spoonful of fresh ricotta. And here it is! Do you cook with purslane? Ingredients

Serves 3 to 4 servings
  • 6large eggs
  • 10 1/2 oztender purslane tips (300 g)
  • 2 tablespoonsgrated cacioricotta or other cheese
  • 1heaping tablespoon fresh ricotta
  • 2-3basil leaves
  • Olive oil
  • Salt
  • Pepper

Steps

    Crack the eggs into a bowl.

    Beat the eggs with the grated cacioricotta cheese.

    Add the washed, tender purslane tips, torn basil leaves, salt, and a grind of pepper.

    Mix well.

    Add a heaping tablespoon of fresh ricotta and mix until combined.

    Heat olive oil in a skillet.

    When the oil is hot, pour in the egg mixture. Halfway through cooking, flip the frittata using a lid to help.

    Cook on both sides until golden brown.

    Transfer to a plate.

    Slice and enjoy while hot.
