Poi Saag and Potato Sabzi

Poi saag is rich in iron and helps combat anemia. It has a high amount of vitamin C, which is very beneficial for the skin, and is also high in calcium, which strengthens bones. It aids digestion and helps keep your stomach clean. Poi saag contains potassium, manganese, and magnesium, which help regulate blood pressure. I grew this saag in my kitchen garden and made this dish using fresh leaves from there.

Ingredients

Serves 3 servings
  1. 3 1/2 ouncespoi saag (about 100 grams)
  2. 1large potato
  3. 1 medium onion, sliced
  4. 5 garlic cloves, finely chopped
  5. 4 green chilies, finely chopped
  6. 1 teaspoon panch phoron
  7. 1 tablespoon mustard oil
  8. 1 tomato, chopped
  9. 1 teaspoon red chili powder
  10. 1/2 teaspoon turmeric powder
  11. 1 tablespoon coriander-cumin powder
  12. 1/2 teaspoon garam masala powder
  13. 1/2 teaspoon salt

    Wash the poi saag leaves thoroughly and chop them finely. Peel and wash the potato, then cut it into small pieces. Slice the onion. Peel the garlic and finely chop it along with the green chilies.

    Turn on the stove and place a pan on it. Add the oil. Once the oil is hot, add the panch phoron. When it starts to crackle, add the sliced onion. Sauté until the onion turns golden, then add the chopped green chilies and garlic. Sauté well. Add the chopped potatoes, cover, and cook on low heat for 2 minutes.

    Check if the potatoes are slightly cooked, then add the chopped poi saag. Add the chopped tomato and all the spices along with the salt.

    Stir everything together. Add 1/2 cup water (about 120 ml), cover, and cook on low heat for 5 minutes. Check if the potatoes are cooked and the sabzi is dry. If so, turn off the heat. The sabzi is ready.

    Transfer to a serving bowl and serve with chapati, rice, or paratha. This is a very tasty and healthy vegetable dish.
