I've gotten into the keto diet, which first helped me lose some weight, and now it's become a (healthy) lifestyle for me.

Mix the water, almond flour, and eggs to make a batter with a medium-thick consistency.

Heat a nonstick skillet with a little olive oil. Pour in some batter to form a thin crepe (similar to scrippelle), and cook until set, then flip to cook the other side.

Sauté the shredded chicken breast with onion to make a ragù. When ready, add tomato sauce and let it cook for at least 1 hour.

Once everything is cooked, fill the crepes with the chicken ragù, mozzarella, and Parmesan. Roll them up and place them in a baking dish. Top with butter and a few small pieces of butter.

Bake at 350°F (180°C) for at least 1 hour.
