When I want to make one more dish for dinner, I often make ‘Carrot & Walnut Salad’ because I always have Carrots and Walnuts. Today I added Dill and dressed the salad with Sour Cream, Mayonnaise and Lemon Juice for a change. It was delicious. If you prefer Mustard Dressing, the recipe is also included below.

Ingredients

5 minutes
4 Servings
  • 2large Carrots *about 350g
  • 1/4 teaspoonSalt
  • 1/4Red Onion *thinly sliced OR finely chopped
  • 1 tablespoonchopped Dill *You can add more
  • Black Pepper
  • 1/2 cupToasted Walnuts *coarsely chopped OR broken
  • 1 tablespoonSour Cream *OR Unsweetened Yoghurt
  • 1 tablespoonMayonnaise *I use Japanese Mayonnaise
  • 1 teaspoonLemon Juice
  • Alternative Mustard Dressing
  • 1-2 teaspoonsWholegrain Mustard OR Dijon Mustard
  • 1 tablespoonLemon Juice
  • 1/2 tablespoonWhite Wine Vinegar *optional, depends on the sourness of the Lemon Juice
  • 1 teaspoonSugar
  • 1 tablespoonOlive Oil OR Sunflower Oil

Steps

5 minutes
  1. 1

    Peel Carrots and cut into thin strips. Add Salt and mix well.

  2. 2

    Add all other ingredients and mix to combine. You can save some Walnuts and add them on top before you serve. *Note: Allow it rest in the fridge for a few hours if you have time. The salad would taste better. Mix well before you serve.

  3. 3

    *Note: Instead of Sour Cream, Mayonnaise and Lemon Juice, you can dress this salad with the popular Mustard Dressing.
