Raita with a tempering or tadke wala Raita is a common side dish to go with meals. This one is with Baby Bottle Gourd or Kaddu. It's a perfect choice for an accompaniment. Not only is it healthy, it's absolutely flavourful and delicious with the crunch of the bottle gourd and the onions.
Unlike simple Raita, it's a Raita with a simple tempering. It goes well with both Rotis and Rice. Infact it goes very well alongside Parathas, Puris and even Khichdi. It's the most loved one in my house. And Raita with Vegetables definitely adds an element of aroma and flavour with utmost health benefits of the amazing Vitamins and Minerals present in them as well.

Steps

Wash and pat dry the baby bottle gourd at first. Peel and cut it into mini cubes. Set aside.

Heat a tablespoon of oil in a pan. Add hing or asafoetida. Add black mustard seeds, curry leaves and dry red chillies. Fry all that for about a minute and then add the bottle gourd cubes. Cover and cook on a low heat until tender and soft.

Meanwhile beat curd until smooth and velvety. Add chopped onions, coriander and mint leaves with salt and pepper.

Add cooked bottle gourd to the raita or the bowl with curd. Adjust salt and pepper. Red chilli powder also can be added instead of the black pepper. Yum! Enjoy!
