Southern Thai Sour Curry with Sea Bass and Pickled Bamboo Shoots

Rinse the pickled bamboo shoots 2-3 times to reduce saltiness. Bring the water to a boil and add the curry paste.

Add salt, fish sauce, sugar, and tamarind paste, then add the pickled bamboo shoots.

Add the sea bass. Once you add the fish, do not stir to avoid a fishy smell. Let it simmer for a while, then turn off the heat. Serve hot.
