Ingredients

Serves 2 servings
  1. 7 ozsea bass (about 200 grams)
  2. 10 1/2 ozpickled bamboo shoots (about 300 grams)
  3. 1 tablespoon Southern Thai sour curry paste
  4. 1 tablespoon tamarind paste
  5. 1 teaspoon salt
  6. 1 teaspoon granulated sugar
  7. 2 cups water (about 500 ml)
  8. 1 1/2 teaspoons fish sauce (1/2 tablespoon)

    Rinse the pickled bamboo shoots 2-3 times to reduce saltiness. Bring the water to a boil and add the curry paste.

    Add salt, fish sauce, sugar, and tamarind paste, then add the pickled bamboo shoots.

    Add the sea bass. Once you add the fish, do not stir to avoid a fishy smell. Let it simmer for a while, then turn off the heat. Serve hot.
