Beat the egg whites with the sugar until stiff peaks form.

In a large bowl, mix the egg yolks with the oil and almond milk. In another bowl, combine the tapioca or cornstarch, lemon juice, chia seeds, rice flour, and baking powder. Add the dry ingredients to the wet ingredients and mix until combined.

Gradually fold in the meringue using a rubber spatula. Pour the batter into a greased and rice-floured 9-inch (23 cm) Bundt pan.

Bake in a preheated oven at 350°F (180°C) for about 30 minutes, then let cool on a wire rack.

Serve the Bundt cake with a thin layer of fig jam and sliced almonds.
