White Beans with Wild Rice

Cooking Instructions

Soak and cook the beans.

Cook rice. I did it in Puck rice cooker. 1 cup of rice for 1 cup and 2 tbsp water. 45 minutes.

Peel and chop sweet potatoes 🍠 add to the pan olive oil and some water. Cook sweet potatoes for 8-10 minutes on medium heat. Add ginger 🫚. Cook 2 more minutes.

Add to the pan diced tomatoes 🍅 and spices. (I didn’t have enough tomatoes so I added bell peppers). Cook 6-8 minutes. Add cooked beans. Add salt.

Prepare tahini sauce that you will add before serving. Mix tahini with warm water and lemon juice. It’s ok to add more water or less lemon juice to adjust to your preference.

In the plate put vegetables on top of rice. Add tahini sauce on top. Add parsley before serving.
