Ingredients

6-8 servings
  1. Marinade
  2. 12 ozcan Evaporated Milk
  3. 1 TbspMustard Powder
  4. 1 TbspHot Sauce (Sriracha preferable)
  5. 2 tspMinced Garlic
  6. 2 tspPaprika
  7. 1 TbspLemon juice
  8. Cornflake coating
  9. 2-3 TbspFavorite dry rub
  10. 1/2 containerCornflakes, finely crushed
  11. 4 large bone-in, skin on Chicken breasts. Each cut in half
  12. 3 Tbspunsalted butter

    Cut chicken breasts in half and place in a large ziploc bag

  2. 2

    Mix marinade ingredients together

  3. 3

    Poor marinade over the chicken and massage bag

  4. 4

    Marinade in fridge for at least 4 hours

  5. 5

    Preheat oven to 350°. Line a large baking sheet with aluminum foil and place cookie cooling racks on it

    Crush cornflakes in a large ziploc bag or pulse in a food processor, then place into a large bowl

  7. 7

    Take the chicken out of the marinade, sprinkle with dry rub, then press it into the cornflakes on all sides

    Lay the covered chicken onto the cookie racks spaced apart as much as possible

  9. 9

    Drizzle a little melted butter over top of each piece

  10. 10

    Bake in the oven for about an hour and half. Let it get good and crispy. With the marinade and the butter drizzle, it shouldn't dry out.

    Let rest for 5 minutes before eating
