Chicken and Rice

Chicken and Rice has always been a favorite Sunday dinner in our house. It's fall off the bone good everytime.

Chicken and Rice has always been a favorite Sunday dinner in our house. It's fall off the bone good everytime.
(Pressure cooker required)
Cooking Instructions

Combine flour mixture in a plastic bag. Coat chicken thighs.

Preheat oil and butter in large skillet medium-high heat. Fry chicken until golden brown on both sides. Don't be concerned that it's not fully cooked, it will continue cooking with the rice.

Take chicken out of pan and transfer into pressure cooker.

In same pan, add in rice. Cook for 5 minutes on medium-high heat or until slightly toasted.

Add in onion and celery to the rice. Cook additional 3-5 minutes.

Transfer rice mixture into pressure cooker as well. Add chicken broth and bay leaves.

Cook on rice setting at high pressure. Use the instant release option and enjoy!

Hola friends!!! Here’s a little bit of nothing I made that just tastes so good I had to share. Plenty of leftovers to make a nice pot of this golden beauty. This is basic and can be made in any shape form or fashion. Add ons for days. I like peas in mine but today I went bare bones. This is inexpensive, but rich and flavorful. I use whatever i have on hand for the chicken broth, I'll use homemade, canned or bouillon and water, it all works really well. I use extra long grain rice from La Preferida Brand, because it gets so creamy. I make some green beans with onion to serve with it, cuz I like to mix it together! nanarenee -

So this is the grandmama version. Pay no attention to the picture. This is a leftover pic bc I forgot to take a picture freshy fresh.... Tip: if you're not one of 20 ppl in America to have minute rice then use 1 & 1/2 cups rice with two cups of water and cook halfway (about 5 minutes) then add that to the casserole. If you use this method cut the 2 cups water to be mixed in the casserole into 1 cup water Chris -

You can never have too many one pan dinners in your repertoire. Obviously, they're easier to clean up, which is great if your family is like ours and you don't have a dishwasher.
