Our chickens are laying lots of eggs this time of year, but in another month, they stop laying till days get longer again. We coat their egg shells with soy bean oil so they stay fresh one more month, but then have to wait for eggs till hens start laying again.

You dont have to wait. You can pickle eggs in the shell without peeling. See recipe below.

Pickled eggs bridge the eggless winter period and are great in winter salads. They stay fresh for two months. The red beet colored eggs brighten salads, the yellow eggs spice up curries, the brown soy sauce eggs complement asian dishes.

  • Cupapple cider vinegar
  • 2 Tspseasalt
  • 12hardboiled eggs
  • 2yellow sweet peppers
  • 1 CupApple cider vinegar
  • 1 CupWater
  • 2 TbsHoney
  • 1 TbsPeppercorns
  • 1 TbsSalt
  • 1 TspCurry powder
  • 1 TbsOlive oil
  • 1 TspPaprika powder
  • 1 TspMustard
  • 12hardboiled eggs
  • 10garlic cloves
  • 1 Tbschili flakes
  • 350 mlsoy sauce
  • 6 Tbsmirin
  • 4 Tbsrice vinegar
  • 1 literwater
  • For fresh egg testing methods

  • Equipment: 3 quart size jars with airtight lids, sauce pan
  • Cost: one chicken eats one pound of feed per day, lays an egg every other day. Two pounds of feed for one egg. Other ingredients, vinegar $1, mirin, soy sauce $1, beets, peppers $1, spices 50 cents

    Boil eggs: put in water or pickling solutions described below, bring to boil, boil 10 minutes, lift eggs out, cool eggs. Peel or spiderweb crack shells with a spoon. To preserve in the shell, spiderweb crack shells by tapping gently with the back off a spoon, then boil eggs again in solutions below, keep refrigerated. Good for eight weeks.

    Place 12 boiled peeled eggs in the jar. Puree red beets with vinegar and other ingredients. Taste. Pour in sterilized jar over the peeled eggs. Ferment a week. Rinse before serving.

    Place 12 peeled boiled eggs in jar, keep immersed with boiled and pureed yellow peppers with vinegar and ingredients for a week. Rinse before serving.

    Place 12 peeled boiled eggs in a jar. Boil soy sauce ingredients in 1 liter water. Taste. Pour over 12 peeled eggs, keep immersed till eggs are dark brown, about a week. Rinse before serving.
