Vietnamese Braised Salmon (Cá Hồi Kho Tộ)

Heat a pan and sauté ginger and shallots until fragrant. Turn off the heat, then add fish sauce, sugar, pepper, and chili.

Add the salmon and marinate for 15 minutes to let the flavors absorb.

Bring to a boil, skim off any foam if needed. Simmer on low heat until the sauce is reduced and thickened.
