This dish dates back to an age when King and his men would go hunting and it would take them days to come back to their palace.They wanted to enjoy their prized huntings there itself. It was this tradition of feasting and feeding others that gave birth to the glorious culinary heritage of Rewa. This recipe is modified keeping both the hunting tradition of kings and the culinary heritage of the Rewa (using cinnamon and cardamom as main spices) as it should be a quick process.

Ingredients

  • 1 kgMutton
  • 200 gmsYogurt
  • 4Red chillies
  • 5Green cardamom
  • 10Cloves
  • 1whole stick Cinnamon
  • 2Black cardamom
  • 2Star anise
  • 2Stoneflower
  • 4Bay leaves
  • 6Black peppercorn
  • 3 tbspGhee
  • 6fat cloves Unpeeled garlic
  • 1small whole garlic
  • 1 tbspSalt

Steps

    Dry roast cumin, coriander seeds, 4 deseeded dry red chilli

  2. 2

    Make a paste of 6 garlic cloves and roasted spices, curd and marinate mutton,add turmeric powder,salt and keep it for 1 hour

  3. 3

    Put the pressure cooker on the burner. Add ghee and once it turns hot, add all the whole garam masala spices, whole garlic.

  4. 4

    Once they start to crackle, add mutton and fry.

  5. 5

    When the mutton gets coated with ghee fry for 5 mins on medium heat.Add salt to taste.Put the lid on.

  6. 6

    After first whistle, lower the heat and let it cook for 15 mins.

  7. 7

    Let it rest for half an hour after putting off the burner. Remove the lid and mix well. Its ready to serve. It goes best with jeera rice and salad.
