They're vegetarian, but even meat lovers will enjoy them! Delicious.

Wash, peel, and finely grate the carrots. Slice the onion and finely chop the garlic.

Sauté the onion and garlic, then add the carrots. Season with salt and pepper. Cook for about 7 minutes, until everything softens and the color changes.

Start assembling your tacos and place them in a skillet with enough oil over medium heat.
