Ingredients

2-4 dozen
  1. 2 sticksunsalted butter softened
  2. 1 cupgranulated sugar
  3. 1 cupbrown sugar (light or dark)
  4. 1 cuppeanut butter
  5. 2large eggs
  6. 1 tablespoonvanilla extract
  7. 2 1/4 cupsall purpose flour
  8. 1/2 teaspoonbaking powder
  9. 1/2 teaspoonbaking soda
  10. 1 teaspoonsalt
  11. 1 cupfinely chopped peanuts
  12. 1 cupold fashioned oats

Cooking Instructions

    Gather ingredients.

    With a electric mixer beat butter until soft and creamy.

  3. 3

    Add brown sugar,granulated sugar mix throughly. Add peanut butter, eggs and vanilla extract and mix.

    In separate bowl whisk flour, bakng soda, baking powder and salt add 1/2 to wet mixture and combine. Add remaining dry mix and combine.

    Hand mix in oatmeal and peanuts.

    Chill dough 30-60 minutes.Roll dough into balls using 2-3 tablespoons dough. Place on parchment lined baking sheet 2" apart. Use fork to make criss cross in cookie.

    Bake at 350 degrees 12 minutes or until golden brown. Depending on your cookie size and oven. It may take longer. Today mine took about 25 minutes. Cookies will be puffy but will flatten out as they cool.
